Roasted Tomato Basil Soup

Ingredients


  • 3 lbs. Roma tomatoes quartered
  • 1 onion quartered
  • 1 head of garlic cut in half
  • 4 sprigs of rosemary
  • 1 bunch basil- half to roast, half to blend, and a few leaves to garnish
  • ¼ cup olive oil
  • Salt and pepper
  • Pinch of red pepper flakes
  • 2 cups chicken stock
  • 4 tbsp balsamic vinegar
  • 1 ½ cups half and half
  •  Freshly grated Parm or Romano cheese for garnish

Instructions


  1. Preheat oven to 425°F. Place tomatoes, onion, garlic, and herbs on a baking sheet. Drizzle with olive oil and season with salt, pepper, and a pinch of red pepper flake. Toss to coat. Roasted for 20-25 minutes or until your tomatoes and onions begin to have a slight char.
  2. Remove from oven and allow to slightly cool. Carefully add everything from your sheet tray minus the rosemary springs into a blender. *The rosemary springs and steam tend to be too woody and tough so you will want to remove and discard them. You will have to squeeze out the garlic into the blender by hand. Add the chicken stock and balsamic vinegar to the blender and blend until nice and smooth. Add another handful of basil into the blender and quickly blend so you still see larger pieces of basil.
  3. Pour the contents of the blender into a heavy bottom pot. Over medium heat, allow the tomato mixture to warm through and begin to bubble for about 10 minutes. Taste for salt and pepper.
  4. Add in your half and half and allow the soup and half and half to combine and become one. Taste again for salt and pepper.
  5. Divide into 4 bowls and garnish with some freshly grated cheese and more basil.
