Grilled Peach, Burrata, and Arugula Salad with Balsamic Dressing

Grilled Peach, Burrata, and Arugula Salad with Balsamic Dressing

Ingredients


Salad

  • 3 ripe peaches sliced in half
  • 2 tbsp coconut sugar
  • 1 tbsp olive oil
  • 8 oz burrata cheese
  • 4 cups arugula
  • ½ red onion thinly sliced
  • Salt
  • ½ cup pine nuts

Dressing

  • ¼ cup balsamic vinegar
  • 1 tbsp Dijon mustard
  • ½ cup olive oil
  • 1 tbsp honey
  • 
Salt and pepper

Instructions


  1. Preheat your grill to 400°F.
  2. While your grill is preheating, prepare your peaches by slicing them in half. Drizzle them with olive oil and sprinkle them with coconut sugar. At this time, you can also make sure your burrata is cut and your onions are thinly sliced (you could use a mandolin here).
  3. Grill on your preheated grill for 3 minutes on each side or until you have grill marks, and the peach have slightly softened and caramelized. Place on a cutting board when done and allow to slightly cool enough to handle.
  4. While the peaches are cooling, prepare your salad dressing by putting all ingredients into a mason jar and vigorously shake until everything is well combined and blended. You could even use a small blender if you do not have a mason jar.
  5. At this point your peaches should be cool enough to handle. Slice them into thirds or quarters to make them easier to eat.
  6. Build your salad by placing the arugula on the bottom of a plate and topping it with the grilled peaches, burrata cheese, thinly sliced onions, and pine nuts.
  7. Drizzle your homemade balsamic dressing over top.
  8. Serve immediately while the peaches are still slightly warm.
