BBQ Chicken Tostadas with Crunchy and Creamy Slaw

  • 1 store-bought rotisserie chicken
  • 1 cup BBQ sauce
  • 8 corn tortillas
  • 1 bag coleslaw mix
  • ¾ cup mayo
  • 2 tbsp sugar
  • 1 tbsp white vinegar
  • Salt and pepper
  • 1 bunch chives
  • 1 jalapeno sliced (optional)
  • 1 lime cut into wedges


  1. Preheat oven to 400 degrees F. Place your corn tortillas on a baking dish and spray with cooking spray. Set aside until your oven is ready.
  2. Take your leftover or rotisserie chicken and shred it. Place in bowl with your favorite BBQ sauce and toss to coat. Allow to sit and soak in all those BBQ flavors.
  3. Prepare your slaw by combining the mayo, sugar, vinegar, and s/p in a bowl. Whisk until fully combined. Toss your coleslaw mix into the dressing and mix until all the coleslaw is coated. Set aside.
  4. Bake your tortillas for 6 minutes or until the tortilla just begins to get crispy and golden.
  5. Remove from oven and top each tortilla with the BBQ chicken mixture. Put back into the oven for 2-3 minutes or until the chicken is warmed through.
  6. Finish building your tostada by topping the chicken with your slaw.
  7. Garnish with some fresh chives, jalapenos, and or a squeeze of lime juice.
