Zucchini Shrimp Boats

I’m always looking for new ways to use up all that great summer zucchini and these shrimp boats have all the textures and flavors going on. With minimal ingredients and steps, you’ll notice this can be pulled together in around 10 minutes! They can be served at room temp so they’re a perfect dish or snack for the summer heat!

Ingredients


  • 2 medium sized zucchinis sliced in half and seeds removed
  • 1lb fresh shrimp peeled and deveined (look for small shrimp)
  • 2 tbsp avocado oil
  • Salt and pepper
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp chili powder
  • 1 cup store-bought cooked white rice or microwavable rice
  • 1 cup Mayo
  • 1 tbsp siracha sauce or hot sauce
  • ½ lime juiced
  • 1 bunch of chives for garnish

Instructions


  1. In a bowl, toss your shrimp, oil, and spices together until the shrimp is fully coated.
  2. Air fry your shrimp at 400 degrees F for 6-8 minutes or until the shrimp is cooked through and pink. If you do not have an air fryer, you can do the same thing in the oven.
  3. Cut your zucchini in half longways so you have 2 zucchini boats from 1 zucchini. Using a spoon, remove the seeds from the inside of the zucchinis, making a well for the rice to nestle inside. Set aside.
  4. While the shrimp is cooking combine your mayo and siracha sauce together in a bowl. Once it is thoroughly combined, I transfer it to something I can easily pour it out of.
  5. You also want to make sure your rice is warmed or cooked while the shrimp is cooking. If using store-bought cooked rice, there really isn’t anything else you need to do. This also could be a great way to use up leftover rice.
  6. Begin building your boat by filling the boat with white rice, topping it with 3-4 cooked shrimp, and drizzling it with your spicy mayo.
