Ingredients
- 12 oz fresh mozzarella balls or Ciliegini
- ½ cup olive oil
- 1 tbsp fresh parsley chopped
- 1 tbsp fresh oregano chopped
- 2 tbsp sun dried tomatoes finely chopped
- 1 bunch basil chopped
- 1 pinch red pepper flakes
- 2 garlic cloves thinly sliced
- Salt
Instructions
- In a medium sized bowl, combine all ingredients except the mozzarella by thoroughly whisking. Generously season with salt and taste. Fresh mozzarella is very bland and needs a good amount of salt.
- Once marinade is combined, add in the mozzarella, and toss to coat. Allow this to marinate and soak for at least 2 hours or up to 24 hours in the fridge. At this time I just cover the bowl with plastic wrap or I transfer to a mason jar depending on how soon I’m going to use the cheese.
- Serve in a bowl with crusty bread and toothpicks.
Tips
- If not using all at once, I transfer to a mason jar fitted with a tight lid and use as needed. Store in fridge for up to 5 days.
