Red, White, and Bloozy Popsicles

Ingredients


  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 lemon, juiced
  • 2/3 cup water
  • 6 tbsp sugar (divided by the 3 layers)
  • 1 cup of vodka (divided by the 3 layers)
  • Red and blue food coloring

Instructions


  1. Using a blender, blend the strawberries, 2 tablespoons of sugar, and 1/3 cup of vodka until smooth. Add a few drops of red food coloring to amp up the red color and blend for another few seconds. Divide the mixture into 6 popsicle molds going about one third up and freeze for 1-2 hours or until the layer is set enough to pour another layer on top.
  2. While the first layer is freezing, prepare the other two layers. For the middle or white lemon ice layer, mix the lemon juice, water, 2 tablespoons of sugar, and 1/3 cup vodka together in a liquid measuring up. Set aside.
  3. For the final layer, blend the blueberries, 2 tablespoons of sugar, 1/3 cup vodka until smooth. Again, add a few drops of blue food coloring to amp the blue up otherwise it will be more of a dark purple.
  4. Once the strawberry red layer is set enough, divide the lemon ice layer between the 6 molds going up another third. Freeze again for 1-2 hours or until just set enough to pour the final layer on top.
  5. Once the second later is set enough, pour your final blueberry layer on top. Top the mold with the lid fitted with a popsicle stick or insert a wooden popsicle stick. Freeze again for 2 hours.
  6. Unmold using a little warm water if difficult and serve responsibly!
