Ingredients
- I ½ lbs. salmon- skin + bones removed, cut into 1” cubes
- 2 tbsp blackening or salmon rub
- 2 jalapenos cut in half and sliced- can remove the seeds and ribs if you want a mild flavor
- 2 tbsp olive oil
- 1 cup mayo
- 3 tbsp sriracha
- 1/3 cup sweet chili sauce
- 1 bunch of chives
Instructions
- Prepare your salmon by removing the skin and bones if your fish monger hasn’t done so already. Cut your salmon into 1- 1 ½” cubes and place in a bowl. Toss the salmon with the rub and the sliced jalapenos. Allow to marinate as you make your bang bang sauce.
- While your salmon is marinating, combine the mayo, sriracha, and sweet chili sauce. Set aside until your salmon is done.
- In a large cast iron or heavy bottom skillet, heat your pan and olive oil to medium-high heat. Once heated, toss your salmon into the hot pan, and allow the salmon to brown and get a nice crust on the first side for 3-4 minutes. Flip the salmon over and allow it to finish cooking through for another 2 minutes or so.
- Transfer the salmon to a bowl and gently toss with about half of your bang bang sauce. Be gentle as the salmon will break up if you’re too rough.
- Serve over top sticky rice. Garnish with chopped chives and a drizzle more of bang bang sauce.
Tips
- Simply steamed green beans are also a good addition to the dish.
- Also, if you’re short on time, they make good microwavable sticky rice these days. Usually, one pack is enough for 2 people.
