Ingredients
- 2 cups flour
- 1 tsp cinnamon
- 2 ½ tsp baking powder
- 2/3 cup brown sugar
- 1/3 cup white sugar
- 2 eggs
- ½ cup Greek yogurt
- ½ cup milk
- 1 tsp vanilla extract
- 6 tbsp melted butter
CRUMBLE
- 1/3 cup oats
- 1/3 cup flour
- 1 tsp cinnamon
- ½ tsp salt
- 1/3 cup brown sugar
- 4 tbsp cold butter
Instructions
- Preheat oven to 425°F and line your muffin tins with paper liners.
- In a large bowl, combine the sugar, eggs, yogurt, milk, vanilla, and butter. Whisk until fully combined. (all wet ingredients)
- Into the wet ingredients, add the flour, cinnamon, and baking powder. Mix until fully incorporated.
- Peel and dice two Macintosh or Granny Smith apples. Gently fold into the muffin batter.
- For the crumble, cut the butter into cubes. Then, in a small bowl, mix together the oats, flour, cinnamon, salt, sugar, and butter. Use your hands to break up the butter cubes and combine the mixture.
- Divide the batter between the 12 muffin tins. Top each muffin with a handful of the homemade crumble. This will make a nice crunchy top.
- Bake in the oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for 5 minutes in the tin, then transfer to a cooling rack.
- Serve warm and dust with powdered sugar.
