Apple Crumb Muffins

Apple Crumb Muffins

Ingredients


  • 2 cups flour
  • 1 tsp cinnamon
  • 2 ½ tsp baking powder
  • 2/3 cup brown sugar
  • 1/3 cup white sugar
  • 2 eggs
  • ½ cup Greek yogurt
  • ½ cup milk
  • 1 tsp vanilla extract
  • 6 tbsp melted butter

 

 

CRUMBLE

  • 1/3 cup oats
  • 1/3 cup flour
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1/3 cup brown sugar
  • 4 tbsp cold butter

Instructions


  1. Preheat oven to 425°F and line your muffin tins with paper liners.
  2. In a large bowl, combine the sugar, eggs, yogurt, milk, vanilla, and butter. Whisk until fully combined. (all wet ingredients)
  3. Into the wet ingredients, add the flour, cinnamon, and baking powder. Mix until fully incorporated.
  4. Peel and dice two Macintosh or Granny Smith apples. Gently fold into the muffin batter.
  5. For the crumble, cut the butter into cubes. Then, in a small bowl, mix together the oats, flour, cinnamon, salt, sugar, and butter. Use your hands to break up the butter cubes and combine the mixture.
  6. Divide the batter between the 12 muffin tins. Top each muffin with a handful of the homemade crumble. This will make a nice crunchy top.
  7. Bake in the oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool for 5 minutes in the tin, then transfer to a cooling rack.
  9. Serve warm and dust with powdered sugar.

TIPS

  • Macintosh or Granny Smith apples work best for this recipe because they bring sweetness and tartness to the muffin.
  • Make sure to use cold butter for the crumble topping to get the perfect crunchy texture when baked.
  • An ice cream scoop can be used to make dividing the muffin batter easier and quicker.
