Avocado Toast with Shaved Eggs and Crispy Chili Oil
Avocado toast might be one of my favorite breakfast dishes and snacks ever. Its quick, easy, and protein packed. Here we used some hard-boiled eggs and shaved them over top for and extra protein boost.
Avocado Toast with Shaved Eggs and Crispy Chili Oil

Ingredients
- 4 slices of crusty bread such as sourdough
- 2 tbsp olive oil
- 1 tbsp garlic powder
- 2 Avocados smashed
- Salt and pepper
- 4 hard-boiled eggs grated
- Crispy chili oil
- Chives for garnish
Instructions
- Drizzle your bread with olive oil and season with garlic powder. Toast in a toaster oven or in a skillet until the bread is warmed through and slightly crispy.
- In a small bowl, smash your avocado with a few pinches of salt.
- Slather your bread with the smashed avocado. Directly over-top the smashed avocado, grate your hard-boiled eggs. 1 egg per slice of toast.
- Season the egg with a pinch of salt and pepper. Drizzle with your crispy chili oil and garnish with some chopped chives.
Tips and Tricks
- Time saving tip- many grocery stores now offer high-quality hard-boiled eggs. If you do not want to make your own, simply buy them!
- Can use a cheese grater or any other handheld grater.
- Not all crispy chili oils are created equal, so find one that is good quality that you enjoy.
