Baked Chicken Taquitos

Ingredients


• 2 cups cooked shredded chicken
• 4oz cream cheese at room temp
• 1 cup shredded monterey jack cheese
• 4oz can green chilies
• 1 tbsp Mexican seasoning
• 1 bunch of cilantro
• Salt and pepper
• Cooking spray
• 15-20 corn or flour tortillas

Instructions


  1. Combine all ingredients in a bowl and stir until fully combine and smooth. Taste for salt and pepper. Add if necessary.
  2. Preheat oven to 425°F.
  3. Using a damp paper towel to cover your tortillas, warm them for 30 seconds in the microwave so they become more pliable and do not crack when rolling them.
  4. Place a large spoonful of filling in the center of the tortilla and roll up tightly. Place on a lightly greased baking dish, seam side down. Continue rolling until all your filling is gone. If your tortilla does not want to stay shut, use a toothpick to hold it in place.
  5. Spray the tops and sides with cooking spray and bake for 15-20 minutes or util the tortilla is crispy and slightly golden brown.
  6. Remove from oven and garnish with cilantro. Serve with salsa, guac, sour cream, and/or ranch!

Tips

  • Can be rolled 1 day in advanced and left in the fridge.
  • Can also roll all and place in an airtight container and freeze them so they’re ready to bake at any time.
  • Can heat them up right from frozen in the oven or in the air fryer. If using the air fryer you will want to cut your cooking time in half.
