Ingredients

  • 1 ounce feta cheese
  • 2 pints cherry tomatoes
  • 3 tbsp olive oil (1 tbsp for shrimp, 2 tbsp for tomatoes)
  • 3 cloves garlic (minced)
  • 1 bunch parsley (chopped)
  • 1 bunch oregano (fresh)
  • 12 ounces dry pasta
  • 1 pound shrimp
  • Italian seasoning
  • Garlic powder
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 400°F.
  2. In a medium baking dish, add the tomatoes and garlic.
  3. Place the block of feta cheese in the middle of the dish. Drizzle the cheese, tomatoes, and garlic with 2 tbsp olive oil.
  4. Next, add the parsley and oregano to spread around the dish.
  5. Bake the dish in the oven for around 20 minutes or until the feta is golden, the tomatoes are bursting, and the juice is bubbling.
  6. While the cheese and tomatoes are baking, prepare your pasta according to the box.
  7. To prepare the shrimp, toss in 1 tbsp of olive oil, Italian seasoning, garlic powder, salt, and pepper.
  8. Add the shrimp to a pan and sauté on medium-high heat for around 4-5 minutes or until they are pink.
  9. After removing the tomatoes and cheese from the oven, add the cooked pasta and cooked shrimp and toss everything together.
  10. Garnish with more herbs and enjoy!

TIPS

  • Don’t expect the feta cheese to melt in the oven. This kind of cheese doesn’t get gooey, but it does soften and get super creamy! Perfect for baked pasta.
  • You can set aside ½ cup of pasta water to add to the mixture to make it less thick.
  • Use any pasta shape for this recipe. I love using bowties!
