Ingredients
- 1 ounce feta cheese
- 2 pints cherry tomatoes
- 3 tbsp olive oil (1 tbsp for shrimp, 2 tbsp for tomatoes)
- 3 cloves garlic (minced)
- 1 bunch parsley (chopped)
- 1 bunch oregano (fresh)
- 12 ounces dry pasta
- 1 pound shrimp
- Italian seasoning
- Garlic powder
- Salt
- Pepper
Instructions
- Preheat oven to 400°F.
- In a medium baking dish, add the tomatoes and garlic.
- Place the block of feta cheese in the middle of the dish. Drizzle the cheese, tomatoes, and garlic with 2 tbsp olive oil.
- Next, add the parsley and oregano to spread around the dish.
- Bake the dish in the oven for around 20 minutes or until the feta is golden, the tomatoes are bursting, and the juice is bubbling.
- While the cheese and tomatoes are baking, prepare your pasta according to the box.
- To prepare the shrimp, toss in 1 tbsp of olive oil, Italian seasoning, garlic powder, salt, and pepper.
- Add the shrimp to a pan and sauté on medium-high heat for around 4-5 minutes or until they are pink.
- After removing the tomatoes and cheese from the oven, add the cooked pasta and cooked shrimp and toss everything together.
- Garnish with more herbs and enjoy!
TIPS
- Don’t expect the feta cheese to melt in the oven. This kind of cheese doesn’t get gooey, but it does soften and get super creamy! Perfect for baked pasta.
- You can set aside ½ cup of pasta water to add to the mixture to make it less thick.
- Use any pasta shape for this recipe. I love using bowties!
