Baked Italian Fish Sticks with Calabrian Chili Tartar Sauce

Ingredients


  • 1lb cod cut into 1-inch sticks
  • 2 eggs
  • ½ cup flour
  • Salt and pepper
  • 1 cup Italian panko
  • ½ cup grated parmesan cheese
  • Olive oil cooking spray
  • 1 cup mayo
  • ½ lemon, juiced
  • 1 tsp chopped Calabrian chili peppers in oil
  • 1 tbsp sweet relish

Instructions


  1. Preheat oven to 450° F. Prepare a baking sheet by lining it with parchment paper and give it a light coating of nonstick cooking spray. Set aside.
  2. Cut cod fillets into 1-inch-wide strips. They do not need to be perfect. Afterall these are homemade!
  3. Prepare your dredging station by using three shallow bowls. In the first bowl you will mix the flour, salt, and pepper. Second bowl, whisk the two eggs. Third bowl, combine the panko and cheese.
  4. Start by dipping each strip into the flour and shaking the excess off. Dip into the whisked eggs allowing the excess again to drip off. Lastly, finish in the panko and cheese mixture. Place onto your lined baking sheet.
  5. Repeat until all fish strips are dredge and coated well. Before popping into the oven, give each strip a spray with nonstick cooking spray. This will help the fish stick get golden brown and crispy.
  6. Bake in the oven for 10-12 minutes or until the sticks are golden brown and the fish easily flakes apart. I like to carefully flip them over halfway through so both side evenly brown.

  7. Calabrian chili tartar sauce by combining the mayo, lemon juice, Calabrian chilis, and relish in a bowl. Mix until thoroughly combined and taste for salt and pepper.
  8. Remove fish sticks from the oven and serve immediately alongside your tartar sauce.

Tips

*Calabrian chili peppers-jar found by the condiments at your local grocer or if you can find the peppers fresh you can use those as well.
