Bang Bang Potatoes

Ingredients
- 2 pounds Yukon gold potatoes (1 inched diced)
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- ½ cup mayo
- 4 tbsp sweet chili sauce
- 1 tsp sriracha
- 1 tbsp lemon juice
- Green onion or chives for garnish
Instructions
- Preheat oven to 425°F and line a baking tray with parchment paper.
- Dice your potatoes into one-inch cubes. Put them in a bowl, then add your olive oil, paprika, garlic powder, and salt.
- Toss the potatoes in the oil and seasonings until fully coated. Then spread onto your baking sheet.
- Bake the potatoes in the oven for 20-25 minutes until they are crispy.
- To make the Bang Bang sauce, combine the mayo, chili sauce, sriracha, and lemon juice in a bowl.
- Once the potatoes are done baking, allow them to cool before transferring to a serving dish.
- Top the potatoes with the Bang Bang sauce and garnish with chopped green onion or chives. Enjoy!
TIPS
- You can completely customize the spice level of the Bang Bang sauce. Add more sriracha or chili sauce for extra heat or add more mayo to decrease the spice level
