Ingredients
- 3 egg yolks
- 1 tbsp warm tap water
- 8 tbsp hot butter
- 2 tbsp lemon juice
- sprinkle of paprika or cayenne pepper
- sprig of fresh dill
Instructions
- In a small blender, combine all ingredients. Blended for 1-2 minutes or until the mixture turns a pale-yellow color and becomes thick.
- Serve immediately overtop your favorite eggs benedict. Garnish with paprika or for heat cayenne pepper and a small sprig of fresh dill.
Tips
- Melt butter in microwave for 1-1 1/2 minutes or melt in a small saucepan over medium heat. You do not want your butter boiling but you do want it very hot.
- Can be made the day before and store in an airtight container in the fridge. When ready to use, simply microwave for 1 minute.
