  • 3 egg yolks
  • 1 tbsp warm tap water
  • 8 tbsp hot butter
  • 2 tbsp lemon juice
  • sprinkle of paprika or cayenne pepper
  • sprig of fresh dill


  1. In a small blender, combine all ingredients. Blended for 1-2 minutes or until the mixture turns a pale-yellow color and becomes thick.
  2. Serve immediately overtop your favorite eggs benedict. Garnish with paprika or for heat cayenne pepper and a small sprig of fresh dill.


  • Melt butter in microwave for 1-1 1/2 minutes or melt in a small saucepan over medium heat. You do not want your butter boiling but you do want it very hot.
  • Can be made the day before and store in an airtight container in the fridge. When ready to use, simply microwave for 1 minute.
