Ingredients
• 1 box brownie mix
• 4 cups vanilla ice cream
• Sprinkles
• Hot fudge (optional)
Instructions
- Line 2 8×8 baking pans with parchment paper long enough so it is hanging out and you can lift the baked brownies easily out of the pan. Spray any edges that are not covered by the parchment paper with nonstick baking spray.
- Prepare the brownies according to the instructions on the box and divide the batter between the two pans. Bake according to the package. Keep in mind that you are baking 2 thinner layers as opposed to 1 and that the brownies will likely take a lot less time than what is notated on the box (If the box says 30 minutes, check them and set a timer for 15).
- Remove from the oven and allow the brownies to cool completely in the pan.
- Once the brownies are cooled, scoop ice cream onto one layer and spread out evenly. You can use an ice cream scoop that has been dipped into hot water to easily scoop out the ice cream. If the ice cream is hard to spread allow it to thaw on the brownies for a minute or two before you spread into an even layer.
- Lift the second pan of brownies out of the pan. Remove the parchment paper and place the brownies on top of the ice cream. Tightly cover with plastic wrap and put in the freezer for 1-2 hours or until the ice cream has firmed back up.
- Remove from the freezer and lift the entire tray out with the parchment paper and place on a cutting board. Working fairly fast, cut your sandwiches into 6-9 even portions depending on how large you want your sandwiches to be.
- Dip the sides where the ice cream is exposed into rainbow sprinkles. You could even use mini chocolate chips, nuts, or coconut. The options are endless. Place on a cookie sheet and cover with plastic wrap and allow to set in the freezer one more time for approximately 30 minutes.
- When ready to serve, remove from freezer and eat as is or drizzle some hot fudge or caramel on top.
