- 1 head of romaine lettuce
- 1 cup salad blend cheese (Asiago, Romano, Parmesan)
- Grated parmesan
- Croutons
DRESSING
- 1 cup mayo
- 1 tbsp Worcestershire sauce
- ½ cup parmesan (grated)
- 1 lemon (juiced)
- 1 tbsp Dijon mustard
- 2 garlic cloves (minced)
- 1 tsp anchovy paste (optional)
- Olive Oil
- Salt
- Pepper
Instructions
- Cook the pasta to al dente based on the package instructions. Drain and set aside in a large bowl.
- In another bowl, combine all the dressing ingredients. Mix until fully combined.
- Add the pasta, lettuce, cheese, and croutons into a large serving bowl. Toss everything together, season to taste, and serve!
TIPS
- I made the croutons for this recipe by cutting up pieces of a crusty bread like ciabatta and toasting them in the oven or air fryer with olive oil, salt, and pepper. You can use store-bought as well!
- Don’t overcook your pasta, you don’t want it mushy.
- Be careful with the salt, the anchovy paste is extremely salty, so start with a small amount and add more to taste.
- The anchovy paste is optional, but it does bring the distinct Caesar salad taste to the recipe.
- You can add your favorite protein to make this recipe an entrée rather than a side.
