Ingredients
• 1 stick of butter
• 3 cups of blueberries
• 1 lemon zested and juiced
• 1 ½ cup flour
• 1 cup sugar + ¼ cup to sprinkle on top
• 2 tbsp baking powder
• Dash of salt
• 1 ¼ cup buttermilk
• 1tbsp vanilla extract
• Mint for garnish (optional)
• Ice cream or whipped cream (optional)
Instructions
- Preheat oven to 350°F.
- In a medium bowl, mix the flour, 1 cup of sugar, baking powder, salt, buttermilk, and vanilla until fully incorporated. Set aside.
- Heat your cast iron skillet over medium heat. Add your butter and allow to melt. Toss in your blueberries reserving a few for the top. Add the lemon zest and juice and mix the blueberries until coated in butter, lemon zest and juice.
- Pour your prepared batter overtop the blueberry mixture. Give it a slight swirl. Top with a few extra blueberries and the remainder ¼ cup of sugar.
- Place in the oven and bake for 32-35 minutes or until the top is slightly golden brown and the edges are bubbling.
- Remove from the oven and allow to slightly cool.
- Serve warm with vanilla ice cream or fresh whipped cream.
