Cheesy Crusted Salmon Bake
Cheesy Crispy Crusted Salmon takes minutes to prepare. This is a prefect weeknight dinner or can be great when you want to impress your guests! A good squeeze of fresh lemon and a glass on crisp white wine finishes off this salmon perfectly!
*For a family fun twist- cut salmon into 1-inch cubes and toss in the mayo mixture. Follow the rest of the recipe as is.

Ingredients
- ¾ cup panko breadcrumbs
- 1/3 cup grated parmesan cheese
- 2 tbsp melted butter
- 1.5 lb. fresh wild salmon skin and bones removed
- 3 garlic cloves finely minced
- 4 tbsp mayo1 tsp ground mustard
- 1 tsp paprika
- 1 tsp ground pepper
- 1 tsp salt
- 1 bunch of fresh flat leaf parsley rough chopped
- 1 cup grated Colby jack cheese (can use whatever you have on hand- mozzarella, cheddar)
- 1 lemon juiced
Instructions
- Preheat oven to 425°F.
- In a bowl, mix the panko, grated parm, and butter until fully incorporated. Set aside.
- Clean and thoroughly dry your salmon – if your fish monger did not clean your fish make sure to run it under cold water after removing the skin and bones. Thoroughly dry the salmon by patting it dry with paper towels. Set aside.
- Mix all spices, mayo, garlic, and parsley together in a small bowl. Set aside.
- Assemble the salmon bake by putting the salmon in an oven proof baking dish. Coat salmon with the mayo mixture and half of the grated cheese.
- Top with the panko mixture and the other half of the grated cheese.
- Bake uncovered for 5-6 minutes or until the breadcrumbs are golden in color. Then cover with tin foil and continue to cook for an additional 10 minutes.
- Remove from oven and serve immediately. Garnish with fresh parsley and a squeeze of fresh lemon juice.
