Cheesy Stuffed Buffalo Chicken Roll-Ups

The inspiration here was the fan favorite, buffalo chicken dip. I figured we can blend all those flavors together and make a delicious chicken roll up. Let me tell you what a winner this was. The filling has three cheeses- ricotta, mozzarella, and blue cheese. Don’t worry, if you don’t love blue cheese, simply swap it out for more mozzarella but i just love the buffalo/blue cheese combo. Its literally a match made in heaven.

Cheesy Stuffed Buffalo Chicken Roll-Ups

Ingredients


  • 6 chicken cutlets- pounded thin (or about 1.5lbs of chicken)
  • 8oz Miceli’s ricotta cheese
  • ½ cup Miceli’s mozzarella cheese
  • ¼ cup blue cheese crumbles + more for garnish
  • Salt and pepper
  • 1 bunch of chives chopped
  • 1 cup buffalo sauce
  • 1 tbsp garlic powder

Instructions


  1. Preheat oven to 400° Prep your chicken cutlets by pounding them between two pieces of plastic wrap until an even thickness. Around a 1/3”-1/4” thickness. Set aside.
  2. In a small bowl, combine the ricotta cheese, mozzarella cheese, and salt until fully mixed.
  3. On your cutting board, lay out 2-3 chicken cutlets. Spread about 2 tablespoons of the ricotta mixture onto the center of the chicken cutlet. Carefully roll the cutlet up tightly and place in a greased dish seam side down. Continue until all your cutlets are rolled up.
  4. Pour your buffalo sauce over top of the cutlets and season with salt, pepper, and garlic powder.
  5. Bake in the oven for 25-30 minutes or until your cutlets are slightly golden and the chicken is cooked through (internal temp of 165° F if using a meat thermometer).
  6. Remove from the oven and garnish with chives and more blue cheese. You could even give it an extra drizzle of buffalo sauce.
  7. Serve alongside your favorite green or starch!

Tips

  • Blue cheese and buffalo go perfect together, however if your family does not care for blue cheese simply omit it and use extra mozzarella cheese in the filling. When I remove the roll ups from the oven, I also sprinkle more blue cheese on the chicken, but you could top with more mozzarella and put back in the oven for a minute to melt it.
