Ingredients
- ½ cup butter (softened)
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 egg (room temperature)
- 1 tsp vanilla paste
- 1 ½ cup flour
- 1 tsp baking soda
- ½ tsp baking powder
- Pinch of salt
- ¾ cup sprinkles
Instructions
- Preheat oven to 350°F and prepare a cookie tray with parchment paper.
- Using a stand or handheld mixer, cream the sugars and butter together for 3-4 minutes until light and fluffy.
- Add the egg and vanilla paste. Mix until fully combined.
- Add flour, baking soda, baking powder, and salt. Mix until just combined, the dough should be light and slightly sticky.
- Using a spatula, gently fold in the sprinkles.
- Scoop and portion the dough onto the cookie trays. Top each cookie with more holiday sprinkles before baking.
- Bake in the oven for 8-10 minutes. The cookies should be golden and gooey.
- Let the cookies cool for 5 minutes. Serve with a glass of milk and enjoy!
TIPS
- For this recipe, I used vanilla bean paste instead of extract because it has a much more pungent vanilla flavor, and you get the little vanilla specks in the cookies.
- Make sure to scrape the sides of the bowl halfway through creaming and mixing to ensure everything is incorporated.
- Don’t over-mix the dough, you want it to be soft to create a light cookie.
- To divide the dough, I used a 1 ½ tsp ice cream scoop, which made portioning the cookies easier, but you can use any kind of scoop or even a spoon!
- Start checking the cookies at 5 minutes in the oven. The sugar cookies can burn quickly.
