Cilantro Lime Chimichurri Sauce

• ¾ cup cilantro
• ¼ red onion
• 1 jalapeno (ribs and seeds removed if you do not like the heat)
• 2 garlic cloves
• Salt and pepper
• ½ cup avocado oil
• 1 lime juiced


  1. In a food processor fitted with a flat blade, add the cilantro, red onion, jalapeno, garlic, and salt and pepper. Pulse several times until you have a chunky mixture that resembles rice. You do not want to process until this becomes a paste. The best part of chimichurri is the texture.
  2. Pour mixture into a small mixing bowl. Add the avocado oil and lime juice. Stir until everything is combined. By stirring in the oil and lime juice, you’re keeping the integrity of the texture of the sauce.
  3. Taste for salt and pepper and add as needed.
  4. Can be served with literally ANY protein or can be store in an airtight container such as a mason jar in the fridge for 2 weeks.
