Ingredients
- 2- 15oz can of chickpeas
- ½ cup chopped dill pickles
- ½ cup pickle juice
- 1/3 cup tahini
- 2 cloves garlic
- 1 bunch fresh dill
- Salt
- Pepper
Instructions
- Drain both cans of chickpeas and set aside to dry.
- In a food processor, add the chopped pickles, pickle juice, tahini, garlic, chopped dill, salt, and pepper. Blend until fully combined.
- Then add the chickpeas. Process for a few minutes before beginning to add a couple of ice cubes at a time. Continue blending and adding ice cubes for around 5 minutes or until you reach a creamy texture.
- Once silky and creamy, taste for salt and add more if needed. Transfer to a bowl or dish and top with olive oil and some red pepper flakes.
- Serve with your favorite veggies and pita.
TIPS
- All brands of chickpeas are different, so some are harder to blend than others. You do want a really soft chickpea.
- Instead of adding a bunch of liquid at once which makes the hummus grainier, the ice cubes slowly melt into the mixture which creates the perfect silk texture.
- The amount of ice you use depends on the brand of chickpeas and the thickness of the mixture. I used 4 ice cubes for this recipe.
- A traditional hummus will be super creamy and spreadable. With the addition of pickles, this hummus will have a little more texture.
