Grilled Elote Peppers
Swapping out the corn for those abundant mini sweet peppers you can find at basically any grocery store. They have Elote Seasoning, Cotija cheese, and a bunch of fresh cilantro. This is quick and perfect as a side dish or appetizer for your next BBQ!

Ingredients
- 1lb bag mini sweet peppers
- 2 tbsp avocado oil- 1tbsp prior to going on the grill, the other for after
- Salt
- 2 tbsp everything but the elote seasoning
- ½ cup cotija cheese
- 1 bunch cilantro
Instructions
- Preheat the grill to 450°
- While the grill is preheating, toss the peppers in the oil and season with salt.
- Skewer all the peppers.
- Once grill is hot, place peppers on the grill and grill for 3-4 minutes per side or until the peppers begin to char and are slightly soft.
- Remove from grill and carefully remove from skewer and place in a single layer on a serving dish.
- Evenly coat the peppers with the everything but the elote seasoning.
- Finish with the cotija cheese and a good handful of freshly torn cilantro leaves.
Tips
- If using wood skewers, make sure to soak them in water for 2-24 hours prior to grill to ensure the wood does not burn.
