Ingredients
- 1 large onion thinly sliced and caramelized
- 4 slices of whole grain artisan bread
- 4 tbsp butter
- 4 tbsp Dijon mustard
- Fondue blend of cheese or any other white cheese (suggestions – gruyere or Swiss)
- 6 thinly sliced deli baked ham
- 1 cup fresh Arugula
Instructions
- Thinly slice your onion. Heat a sauté pan over medium low heat. Add 1 tbsp olive oil. Add your onions and cook slowly until very soft and caramelized. About 10 minutes. Season with salt and set aside.
- While the onions are caramelizing, butter one side of each slice of bread with 1 tablespoon of butter. Set aside.
- Get all your ingredients ready (unwrapped and near the stove top) because you will have to work fast.
- In a skillet large enough to cook two sandwiches, place two slices of bread butter side down onto the skillet on medium low heat. Smear Dijon onto the bread and top with cheese, ham, arugula, and onions.
- Cook for 2 minutes or until the bread is golden brown, then flip and cook for an additional 2 minutes. You can cover the pan to help the cheese melt quicker.
- Remove from skillet and place on cutting board. Slice in half and enjoy!
