Fresh Basil Pesto

Ingredients


• 2 cups packed basil leaves
• 2 cloves of garlic
• 1/3 cup pine nuts
• 1 lemon zested and juiced
• Salt and pepper
• Pinch red pepper flakes (optional)
• ¼ cup olive oil
• ½ cup fresh finely grated Romano cheese

Instructions


  1. Using a food processor fitted with a blade, add the basil, garlic, pine nuts, lemon zest and juice. Pulse until everything comes together and a thick grainy paste is formed.
  2. With the processor on, slowly drizzle in the olive oil.
  3. Add the pinch of red pepper flakes and salt/pepper and pulse again. If you do not plan to use this right away and plan to store in the fridge or freezer, you’re all set. If you plan to use right away, then you can add your cheese for the final step.
  4. Freshly grate your cheese in and give it one final pulse. You want your pesto thick enough to stick to your pasta, bread, or protein. The options to use this healthy flavorful sauce are endless.
