Ingredients
- 2 celery stalks finely chopped
- 2 small cucumbers finely chopped
- ¼ cup red onion finely chopped
- 1 cup watercress sprigs or baby spinach
- ¼ cup parsley
- 2 green onions
- ½ jalapeno (seeds removed if desired)
- 3 sprigs of tarragon
- ½ cup basil
- 1 lemon, juiced
- 1 garlic clove
- 2 anchovy filets (optional but adds a great saltiness)
- ¼ cup sherry vinegar
- 2 tbsp avocado oil
- ¾ cup sour cream
- Salt and pepper
Instructions
- Finely chop the celery, cucumbers, and red onion. Place in a bowl and set aside. This is going to create some texture and crunch to your dip.
- Using a blender, add all your ingredients into the blender and blend until fully incorporated and thick. About 1 minute.
- Pour the contents of the blended into the bowl with your chopped veggies. Thoroughly mix everything together and taste for salt and pepper.
- Serve immediately with veggies and pita for dipping or store in the fridge for 2 days.
Tips
- Watercress help create that bright green color, however it is slightly more bitter so if you do not like the taste of watercress, simply substitute for spinach.
