Ingredients


  • 2 celery stalks finely chopped
  • 2 small cucumbers finely chopped
  • ¼ cup red onion finely chopped
  • 1 cup watercress sprigs or baby spinach
  • ¼ cup parsley
  • 2 green onions
  • ½ jalapeno (seeds removed if desired)
  • 3 sprigs of tarragon
  • ½ cup basil
  • 1 lemon, juiced
  • 1 garlic clove
  • 2 anchovy filets (optional but adds a great saltiness)
  • ¼ cup sherry vinegar
  • 2 tbsp avocado oil
  • ¾ cup sour cream
  • Salt and pepper

Instructions


  1. Finely chop the celery, cucumbers, and red onion. Place in a bowl and set aside. This is going to create some texture and crunch to your dip.
  2. Using a blender, add all your ingredients into the blender and blend until fully incorporated and thick. About 1 minute.
  3. Pour the contents of the blended into the bowl with your chopped veggies. Thoroughly mix everything together and taste for salt and pepper.
  4. Serve immediately with veggies and pita for dipping or store in the fridge for 2 days.

Tips

  • Watercress help create that bright green color, however it is slightly more bitter so if you do not like the taste of watercress, simply substitute for spinach.
