Ingredients
- 1 lemon
- 1 bunch of asparagus
- 1 tbsp olive oil
- ¼ red onion (thinly sliced)
- ½ cup feta cheese
- ¼ cup toasted pine nuts
- Salt
- Pepper
Instructions
- Preheat the grill to medium-high heat.
- Clean the asparagus and cut off the tough ends. Slice the lemon into 4 pieces.
- Toss asparagus in olive oil, salt, and pepper.
- Grill the asparagus and lemon for 3-4 minutes per side, until the asparagus is tender and has visible grill marks. Use less time on the grill for crunchier asparagus.
- Once fully cooked, remove from the grill and squeeze the grilled lemon over top.
- Add the chopped onion, feta, and pine nuts. Serve with your favorite cookout dishes!
TIPS
- Grilling the lemon helps release the juices and bring out a sweet and smoky flavor.
- After tossing the asparagus, I put it directly on the grill, instead of putting them in a pan or tin foil, to enhance the grill flavor.
- I used a mandolin to slice the red onion into very thin pieces.
- Use tongs to squeeze the grilled lemon over the asparagus so you don’t burn your fingers!
