Grilled Pulled Pork Nachos
Seriously, what is easier than dumping a bunch of leftover meat and cheese onto tortilla chips and throwing the tray directly on the grill?

Ingredients
- 1-10oz bag of tortilla chips
- 2 cups Shredded Monterey Jack cheese
- 1 jar of your favorite store bought queso
- Pulled Pork
- 3 radishes thinly sliced
- 1/4 onion thinly sliced (can pickle if you like a sweeter flavor)
- 2 jalapenos, thinly sliced
- Sprinkle of Mexican seasoning
- Cotija cheese, crumbled
- Salsa
- 1 bunch cilantro
- 1 lime
Instructions
- Preheat your grill to medium heat.
- Prepare your nachos by using an old sheet tray, a grilling tray, cast iron pan, or disposable tray and laying tortilla chips on the bottom of the tray in an even layer.
- Top the tortilla chips with the shredded cheese, the meat, the queso, radishes, onion, and jalapenos. Sprinkle with Mexican seasoning.
- Place the entire tray on the grill and close for 3-4 minutes or until the cheese is nice and melted and the meat and veggies are warmed through.
- Remove from the grill and garnish with salsa, crumbled cotija cheese, a drizzle of more queso, cilantro, and some lime wedges.
- Serve alongside a Platform Muni beer or a Joe Thomas Kolsch by GLBC.
Tips
- Can use meat or omit the meat. I usually use whatever leftovers I have in the fridge. In this case I used pulled pork, but any grilled meat or rotisserie chicken will do.
- You can garnish with whatever favorite toppings you prefer. Avocado, Pico, corn, you can’t go wrong with whatever you pick!
