Grilled Shrimp Scampi Pizza
Oh my gosh is this a winner! The idea of cooking everything on the grill makes clean up a breeze. The shrimp cooks in a bath of lemon, garlic, and butter and once poured over top your flatbread it creates that distinct scampi sauce. I used a store-bought flatbread to cut the cooking time in half, but you could certainly use fresh pizza dough as well.

Ingredients
- 4 tbsp butter
- 6 cloves of garlic, minced
- 1 pinch of red pepper flakes
- Salt and pepper
- 1lb shrimp, peeled and deveined
- ½ lemon juiced
- 1 store-bought flatbread
- 1 cup shredded mozzarella cheese
- ¼ cup parmigiano Reggiano
- 1 bunch fresh parsley
Instructions
- Preheat your grill to medium heat.
- Making a packet with tinfoil, place your shrimp, butter, lemon juice, salt, pepper, and red pepper flakes on the tinfoil and wrap tightly. Once the grill is hot, place your foil packet on the grill. Cook your shrimp until pink. About 3-5 minutes. I toss the shrimp around in the juices around the two-minute mark. Make sure to seal the foil packet back up really well after mixing.
- While the shrimp is cooking, gather your flat bread and cheeses. Once the shrimp is done, place one flatbread on the grill, top with half the mozzarella, then the shrimp and all of their juices, the other half of the mozzarella and allow to grill.
- You will want to make sure the cheese is nice and melted. You may have to close the lid of your grill for a minute to achieve this, but don’t walk away as the flatbread will cook very quick and can easily burn.
- Once the cheese is melted, remove from grill and place onto a cutting board. Top with the parm cheese and a good sprinkle of finely chopped parsley. If desired, you can give the flatbread one more squeeze of a lemon.
- Slice and serve immediately!
