Grilled Veggie Kabobs

Ingredients
- 2 bell peppers
- 1 red onion
- 1 zucchini
- ½ pint cherry tomatoes
- 8oz button mushrooms
- 2tbsp + drizzle for garnish olive oil
- ½ lemon juiced
- Salt and pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp paprika
- 1 bunch of parsley for garnish
Instructions
- Prepare your veggies by cutting the bell peppers and onion into large chunks. Slice your zucchini into rounds and clean your mushrooms with a damp cloth. Place all the veggies into a large bowl and season with salt, pepper, onion powered, garlic powder, paprika, ½ lemon juice, and olive oil. Stir to fully coat all the veggies. Allow to sit in the marinade for 10 minutes. *If using wooden skewers, you will want to make sure you soak your skewers for at least 30 minutes.
- Preheat your grill to 400° F or medium high heat.
- While your grill is preheating skewer your veggies. Place your veggies on a baking sheet.
Place the veggies on the grill and allow to grill for 8-10 minutes or until the veggies begin to soften and have grill marks. I usually turn them every few minutes. - Remove from grill and garnish with a little extra lemon juice and freshly chopped parsley.
