Cowboy caviar has been all over my social media, and now I understand why it’s so popular! It’s super easy and full of protein, not to mention how colorful and fun you can make it. This is a must-try for anyone looking for a new summer snack.

Ingredients
- 1-15 ounce can of black beans (drained and rinsed)
- 2 ears of fresh corn
- ¼ red onion
- 1 jalapeno
- ½ bell pepper
- 1 avocado
- 1 bunch cilantro
- 2 limes
- 2 tbsp avocado oil
- Salt
- Pepper
- 3 ounces Queso fresco
- 1 clove garlic (minced)
- Chips of choice
Instructions
- Dice the onion, jalapeno, bell pepper, and avocado. Then chop the cilantro and cut the fresh corn off the cob. Cut the vegetables small enough to fit on a chip.
- Combine the beans, corn, onion, jalapeno, bell pepper, avocado, and cilantro in a big bowl. Juice the limes over the ingredients.
- Add the avocado oil, salt, pepper, cheese, and minced garlic.
- Mix until fully combined.
- Enjoy with your favorite chip. A healthy and colorful summer snack!
TIPS
- This recipe can be fully customized. Use your favorite vegetables and try adding a fruit like peaches or mango for a sweet and salty flavor!
- I simply combined avocado oil, salt, and pepper for the dressing.
- When cutting the corn off the cob, try setting the ear on its side horizontally instead of standing it up vertically. This makes it less messy!
- When cutting the jalapeno, you can remove the ribs and seeds or keep them for a spicier dip.
