Italian Herb Marinated Flank Steak

Ingredients


  • 2lb flank steak
  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 3 garlic cloves smashed
  • 1 lemon juiced
  • 1 hot pepper such as a Calabrian chili or jalapeño thinly sliced
  • 1 bunch of parsley
  • 1 bunch of basil
  • Salt and pepper

Instructions


  1. In a medium sized bowl, combine all ingredients except the flank steak and stir to combine. Add in the flank steak and ensure the steak is fully coated with the marinade. Cover with plastic wrap and put in the fridge until ready to grill. I like mine to marinate overnight but if you do not have that much time 4 hours will do. Flank steaks can be tough if not treated properly so if you can make time to allow it to marinate overnight, I would suggest so. This process really tenderizes the meat.
  2. Preheat grill to 500 degrees F. You want your grill hot for this. Your flank is a thin cut of meat and will cook insanely fast.
  3. Once your grill is hot, pull your flank steak out of the marinade allowing all the excess herbs and such to fall off back into the bowl. These ingredients will burn on the grill. Place your flank on the grill and allow to slightly char and get grill marks for about 2-3 minutes with the lid closed. Flip and cook an additional 2 minutes. I suggest making a flank medium rare or medium, so my times here are going to be just that.
  4. Remove from grill and allow to rest for 10-15 minutes.
  5. Once your steak has rested, slice your flank going against the grain. This will result in the most tender slices of steak.
  6. Garnish with more fresh herbs.
