Peanut Butter and Jelly Cookie Bars

Ingredients


• 1 cup peanut butter- creamy or crunchy
• ¾ cup brown sugar
• ½ cup butter at room temp
• 1 egg at room temp
• 1 ½ cup flour
• Pinch of salt
• ½ tsp baking powder
• 1 cup strawberry jam
• ½ cup coarsely chopped salted peanuts
• ¼ cup oats

Instructions


  1. Preheat oven to 350° F. Line your 8×8 baking dish with parchment paper, leaving 1-2 inches overhanging. Spray parchment and pan with baking spray.
  2. In a medium sized bowl and by using a hand mixer, combine the peanut butter, sugar, and butter. Once fully mixed, add the egg and mix again.
  3. To the wet PB mixture, add the flour, salt, and baking powder. Mix again until everything is just combined.
  4. Press 2/3 of the batter into the 8×8 baking dish. With the remainder of the batter, fold your oats in and set aside.
  5. Spread an even layer of jam over the batter.
  6. Top the jam with the rest of the oat batter by crumbling it all over the top.
  7. Sprinkle the chopped peanuts over the crumbled batter.
  8. Bake in the oven for 25-30 minutes or until the bars are cooked through, and the top is golden brown.
  9. Remove from oven and allow bars to cool completely in the pan. Once cool. Remove from pan by using the parchment paper and cut into equal bars.
  10. Enjoy with a nice glass of cold milk!
