Roasted Tomato Sauce
Have a bunch of extra garden tomatoes you don’t know what to do with? Make this delicious roasted tomato sauce! The fresh tomatoes and hint of red pepper flake make for a flavorful sauce that packs a punch.

Ingredients
- 1 bushel of tomatoes
- 1 onion
- 10 garlic cloves
- 2 tbsp olive oil
- 1/8 cup sugar
- 2 bunches of basil
- Salt
- Pepper
- Red pepper flakes (optional)
Instructions
- Preheat oven to 425°F.
- Roughly chop all the tomatoes and onion. Place on a sheet tray lined with parchment paper or tin foil to help with clean up.
- Smash garlic cloves and spread out on the tray.
- Once tomatoes, onion, and garlic cloves are on the sheet tray, drizzle them with olive oil and season with salt, pepper, and red pepper flakes if preferred.
- Toss everything together and sprinkle the top with sugar. Then, rip up the basil with your hands and add that to the top of the tray.
- Place the tray into the oven for 25-30 minutes. Then remove from the oven and let it cool for a few minutes.
- Scoop all the tomatoes, onion, and garlic into a food processor or blender. Blend until everything is combined, and taste for seasoning. Add more salt and pepper if needed.
- Then transfer the sauce to a mason jar or air-tight container for storage. Add another bunch of basil directly into the jar to enhance the flavor.
- Let the sauce completely cool in the container. Once completely cool, store in the fridge for 5-7 days or the freezer for 3 months.
TIPS
- This recipe is a great way to use up your garden tomatoes, I used fresh San Marzano tomatoes. The total amount of sauce will depend on the type and size of tomatoes you use.
- This is a roasted sauce, so it gives you more of a charcoal flavor that packs a punch. It would be great for calzones, pizzas, dipping sauces, or even pasta!
- If you want to spice up this recipe even more, you can add in a Calabrian chili or something similar.
