Salmon Skewers with Light Dill Dipping Sauce

Ingredients


  • 2 lbs fresh salmon bones and skin removed
  • 2 tbsp olive oil
  • 2 tbsp salmon rub (I used Trader Joes)
  • 1 ½ cup Greek yogurt (I use zero fat)
  • 1 bunch dill chopped
  • 3 tbsp capers roughly chopped
  • 1 lemon juiced
  • Salt

Instructions


  1. Cut your boneless, skinless salmon filet into 1-inch cubes and toss in a bowl.
  2. Toss the salmon with the olive oil and salmon rub ensuring all pieces are coated well. Allow to marinate for 15 minutes while you get your dipping sauce prepared.
  3. In a small bowl, combine the yogurt, chopped dill, roughly chopped capers, and lemon juice. Mix well and taste for salt. Your cappers will be salty so always make sure to taste for salt before adding a pinch or two. Set aside while you prepare your grill.
  4. Before turning your grill on, spray your grill with nonstick grilling spray or rub the grates with a high heat oil such as canola, vegetable, or avocado oil. Turn your grill on to medium heat and allow to preheat to 400 degrees F
  5. While your grill is preheating, take your marinated salmon and divide the cubes between 4-5 skewers. I usually skewer the cubes in two spots to ensure its nice and secure on the skewer.
  6. Place on the grill and grill for 2 minutes on each side. They will take about 7-8 minutes.
  7. Remove from the grill and serve with extra lemon slices and the light dill dipping sauce.

Tips

*Time and money saver- use a store-bought rub. Cost effective and you do not have to take extra time to make a rub. Always taste the rub for salt or read the label. Some lack this seasoning and need to be added.
