Sheet Pan Chicken Gyros with Tzatziki Sauce

Ingredients


INGREDIENTS

  • 2lbs boneless skinless chicken thighs cut into strips (can sub chicken breasts if that’s what you prefer)
  • ½ cup Greek yogurt
  • 1 lemon juiced
  • 3 tbsp Greek seasoning
  • ½ red onion thinly sliced, could also use pickled red onion
  • 1 large tomato sliced and then halved
  • 2 cups shredded romaine lettuce
  • Fresh Pitas warmed

SAUCE

  • 1 cup Greek yogurt
  • 1 lemon juiced
  • ½ cucumber shredded
  • 1 clove of garlic minced
  • Few sprigs of dill chopped
  • Salt + Pepper

Instructions


  1. Preheat oven to 425° Spray your baking sheet with nonstick cooking spray and set aside until ready to bake.
  2. In a large bowl, combine the yogurt, lemon juice, Greek seasoning, and sliced chicken. Mix to ensure all pieces of chicken are thoroughly coated. Allow to sit in the marinade for 15-20 minutes.
  3. While the chicken is marinating, make your sauce by combining all sauce ingredients together in a bowl. Set aside and allow the flavors to marry. Prepare your thinly sliced onion, tomato, and lettuce.
  4. Pour chicken into an even layer onto your baking dish and bake for 25 minutes. Halfway through, give the chicken a toss and flip. Once the chicken is about done, turn the broiler on and allow the chicken to slightly char. Stay close as this could burn easily and will likely only take 2-3 minutes max!
  5. Once the chicken is done, warm your pitas in the microwave or over a gas stove top. I like to char mine up slightly, but the microwave or air fryer will do just fine as well.
  6. To build, slather some tzatziki onto a warm pita and top with lettuce, tomato, and onion. Finish topping with the chicken. Add another drizzle of tzatziki and EAT!

Tips

  • Could allow to marinate overnight.
  • Could give the gyros a squeeze more of lemon and a sprig of dill if you want a more amplified lemon and dill flavor.
