Stuffed Banana Peppers
Stuffed banana peppers are a great dinner recipe idea. The subtle spice from the peppers and sausage makes for a flavorful dish! I used fresh peppers from my backyard garden, and I was so pleased with how this turned out.

Ingredients
- ¼ onion
- 2 cloves of garlic
- 1 pound of sausage
- 6 banana peppers
- ½ cup mozzarella
- ¼ cup mascarpone
- ¼ cup fresh-grated pecorino
- 1 tbsp olive oil
- Oregano
- Basil
- Salt
- Pepper
- Marinara of choice
Instructions
- Preheat broiler.
- Cut the banana peppers in half and deseed them. Place them on a baking sheet lined with parchment paper.
- Mine the onion and cloves of garlic.
- Add olive oil to a pan and preheat over medium-high heat.
- In the pan, add the onion, garlic, and sausage. Break the sausage into very small pieces and add some salt and pepper to taste.
- Cook the meat until there is no pink left and the garlic and onions are sauteed.
- Remove the pan from the heat and add the mozzarella and mascarpone cheese to the mixture. Mix until combined.
- Fill each banana pepper half with the sausage mixture, packing it in.
- Drizzle the stuffed banana peppers with some olive oil and then place them in the oven.
- Broil for 3-4 minutes, making sure to keep an eye on them until the tops are golden brown.
- Remove from the oven and top with grated pecorino cheese, oregano, and basil.
- Heat your favorite marinara sauce and add it to the bottom of your serving dish. Enjoy!
TIPS
- If you want a spicier pepper, leave some of the seeds.
- You can also bake the peppers in the oven at 450°F for 20-25 minutes until golden brown instead of broiling.
