Stuffed Banana Peppers

Stuffed banana peppers are a great dinner recipe idea. The subtle spice from the peppers and sausage makes for a flavorful dish! I used fresh peppers from my backyard garden, and I was so pleased with how this turned out.

Stuffed Banana Peppers

Ingredients


  • ¼ onion
  • 2 cloves of garlic
  • 1 pound of sausage
  • 6 banana peppers
  • ½ cup mozzarella
  • ¼ cup mascarpone
  • ¼ cup fresh-grated pecorino
  • 1 tbsp olive oil
  • Oregano
  • Basil
  • Salt
  • Pepper
  • Marinara of choice

Instructions


  1. Preheat broiler.
  2. Cut the banana peppers in half and deseed them. Place them on a baking sheet lined with parchment paper.
  3. Mine the onion and cloves of garlic.
  4. Add olive oil to a pan and preheat over medium-high heat.
  5. In the pan, add the onion, garlic, and sausage. Break the sausage into very small pieces and add some salt and pepper to taste.
  6. Cook the meat until there is no pink left and the garlic and onions are sauteed.
  7. Remove the pan from the heat and add the mozzarella and mascarpone cheese to the mixture. Mix until combined.
  8. Fill each banana pepper half with the sausage mixture, packing it in.
  9. Drizzle the stuffed banana peppers with some olive oil and then place them in the oven.
  10. Broil for 3-4 minutes, making sure to keep an eye on them until the tops are golden brown.
  11. Remove from the oven and top with grated pecorino cheese, oregano, and basil.
  12. Heat your favorite marinara sauce and add it to the bottom of your serving dish. Enjoy!

TIPS

  • If you want a spicier pepper, leave some of the seeds.
  • You can also bake the peppers in the oven at 450°F for 20-25 minutes until golden brown instead of broiling.
