Whole Grilled Cauliflower with Herby Whipped Ricotta

Ingredients


  • 1 whole head of cauliflower- leaves trimmed off
  • 2 tbsp olive oil
  • Salt and pepper
  • 1 ½ cup whole milk ricotta
  • 6 sprigs thyme removed from the stem
  • ½ cup basil
  • 1 lemon zested
  • Pinch of red pepper flakes
  • Honey to drizzle

Instructions


  1. Preheat grill to 400° F.
  2. Prepare your cauliflower by trimming the stems being careful to keep the entire head intact. Drizzle the cauliflower with olive oil and liberally season with salt and pepper. *You can place the cauliflower in a grill basket to keep it from tipping over but I find it is just fine directly on the grill.
  3. Place cauliflower on the grill and allow to grill and turn slightly brown for the next 20-25 minutes. I usually keep the grill closed and check on it every 7-8 minutes. If certain sides of the cauliflower are browning too much simply turn it.
  4. While the cauliflower is grilling, prepare your whipped ricotta by placing the ricotta in a food processor with the lemon zest and a liberal amount of salt. Allow to whip up until nice and fluffy.
  5. Finely chop your basil and thyme and fold that into the ricotta mixture or pulse a few times with the food processor. Taste mixture for salt. Ricotta can be very bland if not seasoned properly. You may have to add more salt.
  6. To serve, place whipped ricotta on the bottom of a dish and top with whole grilled cauliflower. I cut bite sized chunks of the cauliflower off so everyone can dig in. Garnish with extra lemon zest, basil, thyme, and red pepper flake. I also like to give it a light drizzle of honey.
