Ingredients
- 1/4 Cup Sesame Oil
- 1/3 Cup Low Sodium Soy Sauce
- 1/2 tbsp Xanthan Gum
- 1 tbsp Olive Oil
- 2 packages pre – spiralized zucchini or 2 medium – sized zucchinis made into spirals
- 1 tbsp fresh ginger peeled and minced
- 3 cloves of garlic (minced)
- 1 carrot (shredded)
- Sesame seeds
- Chives
Instructions
- Mix by whisking sesame oil, soy sauce, and xanthan gum in a bowl until fully incorporated. Set aside.
- Heat olive oil in a wok or sauté pan to medium – high heat. Add zucchini, garlic, and ginger. Cook for 2 minutes until the zucchini just starts to soften.
- Pour sauce over zucchini and continue cooking for 2 – 3 minutes or until zucchini is softened to your liking.
- Remove from heat. Divide into 4 bowls and garnish with sesame seeds, fresh chives, and carrot. Serve immediately.
