Caprese Panini with Summer Aioli
I just got back from my trip to Italy, and I was so inspired there. The food is so fresh and simple, and I wanted to bring a taste of that back home! This caprese panini is an easy recipe with so much flavor because of the summer pesto aioli. You have to give it a try!

Caprese Panini with Summer Aioli

Ingredients
- 4 slices or 2 buns of ciabatta bread
- 8 slices of fresh mozzarella
- 2 heirloom tomatoes
- 1 bunch of basil
- 4 tbsp pesto
- 1 cup mayo
- 1 tbsp balsamic glaze
- 2 tbsp olive oil
- Salt
- Pepper
Instructions
- In a bowl, combine the pesto and mayo. Cover one side of each piece of bread with the mixture.
- Layer the mozzarella and tomato on two pieces of bread to make both sandwiches. Drizzle balsamic glaze and sprinkle salt and pepper over the cheese and tomato, to taste.
- Finally, add some fresh basil. Place another piece of bread on top to complete each sandwich.
- Preheat a panini press or a grill pan, and coat with olive oil so the sandwiches don’t stick.
- Place the paninis in the press or on the pan and let them cook for 2-3 minutes on each side or until golden brown. The cheese should start to melt.
- Serve and enjoy! A taste of Italy at home.
